Memphis-based Pimentos opened its newest location in the food court in the Madison Plaza on the University of Tennessee Health Science Center’s Memphis campus. Hours of operation are 7 a.m. to 3 p.m., Monday through Friday.
The restaurant joins Starbucks, Chick-fil-A, and Soi No. 9 in the university’s food court located in the lobby of the building at 920 Madison Avenue. The vendors serve not only UTHSC students, faculty, staff, and visitors, but Medical District employees and students, and the general public.
James King, general manager of the Pimentos at UTHSC, said the location offers a full menu with burgers, quesadillas, sandwiches, salads, and sides, as well as some pre-packaged sandwiches, salads, wraps, and to-go items. Daily specials are also on the menu.
Breakfast is available daily, including a build-your-own breakfast plate with eggs, biscuit or potatoes, and choice of bacon, sausage, or turkey sausage. Other breakfast options include chicken biscuit bites, a sausage biscuit, grab-and-go yogurt parfaits, muffins, and fruit. Catering will be an option in the future, he said.
“We think our food is going to be enjoyed by a lot of people who come through the University of Tennessee Health Science Center, whether it be from the hospitals or whether it’s students,” King said. “We think we have lots of options for all different types of tastes, and we just wanted to offer it to people in this area.”
The Madison Plaza Food Court at UTHSC underwent a major renovation in 2018 and opened for business with new vendors in January 2019.
“We are excited to welcome Pimentos as our newest vendor in the UTHSC Madison Plaza Food Court,” said Ken Brown, JD, PhD, MPA, FACHE, executive vice chancellor and chief operations officer for UTHSC. “In remaining true to our commitment of providing opportunities for local vendors and refreshed menu options for our campus and hospital consumers, we believe Pimentos adds new culinary options, including its very well-received breakfast menu. Please join me in welcoming our new partner, and we are happy to receive what we hope is continued positive feedback.”
